Ingredients:
• low fat paneer – 200 gm
• large eggplant 1,about – 250 gm
• Coriander seeds – 1 tbsp
• Cumin seeds – 2 tsp
• black pepper Corn – 1 tsp
• dry red chilli – 1
• whole wheat Roti or pita bread to serve
• Olive oil to brush
• Lime juice to taste
• salt to taste
Method:
- Crush coriander, cumin, pepper and red chilli together. Mix with salt.
- Cut paneer into 4 slices.
- Cut brinjal into 2 cm thick slices.
- Place paneer and brinjal in a bowl.
- Toss with crushed spice mixture.
- Marinate for one and a half hour.
- Brush with olive oil and grill on both sides till light brown.
- Serve hot with Roti or pita bread, accompanied by Chutney.
