Ingredients:

• low fat paneer – 200 gm
• large eggplant 1,about – 250 gm
• Coriander seeds – 1 tbsp
• Cumin seeds – 2 tsp
• black pepper Corn – 1 tsp
• dry red chilli – 1
• whole wheat Roti or pita bread to serve
• Olive oil to brush
• Lime juice to taste
• salt to taste

Method:

  1. Crush coriander, cumin, pepper and red chilli together. Mix with salt.
  2. Cut paneer into 4 slices.
  3. Cut brinjal into 2 cm thick slices.
  4. Place paneer and brinjal in a bowl.
  5. Toss with crushed spice mixture.
  6. Marinate for one and a half hour.
  7. Brush with olive oil and grill on both sides till light brown.
  8. Serve hot with Roti or pita bread, accompanied by Chutney.
