Ingredients:

• 1 bunch -tambidi bhajji / Amaranth leaves )
• 2 tsp – oil
• 1 tsp – Mustard Seeds
• 1/2 tsp – Jeera ( Cumin seeds )
• 1/2 tsp – Urad Dal
• 1/2 tsp – salt ( or to taste )
• For Coconut mixture (grind):
• 2 tbsp – grated Coconut
• 1/2 tsp – Red Chilli powder
• 1/4 tsp – Turmeric powder

Method:

  1. Wash and clean tambidi bhajji.
  2. Drain out water thoroughly and cut into small pieces.
  3. In a wide pan / kadai, heat oil and add mustard seeds.
  4. When they begin to pop, add cumin seeds and urad dal.
  5. Add amaranth leaves / bhajji and mix well.
  6. Cover with a lid and cook on low to medium heat for 10 – 12 minutes. Do not add water. Stir occasionally.
  7. When it is done add coconut mixture and salt to taste. Stir well for 2 minutes or until amaranth leaves well mixed with coconut mixture.
  8. Serve with rice and dal / dali thoy.
