Ingredients:
• 2 Egg yolks
• Pinch of dry mustard
• Salt and pepper
• ½ tsp. Sugar
• Few drops of Lemon juice
• 300 ml. oil
• 2-3 tbsp. wine Vinegar
Method:
- Combine the egg yolks, seasoning, sugar and lemon juice in a bowl using a wooden spoon.
- Add the oil drop by drop, whisking well until the mixture becomes thick.
- Beat in the vinegar – this will thin down the mayonnaise, adjust the seasoning.
