Ingredients:
• Plain or Wheat flour
• Sweet Corn Cream style
• Herbs
• Salt, pepper, Green chillies
• Bread
• Grated Cheese
Method:
- Take 2 tbsp plain or wheat flour in a dry pan.
- Stir gradually, while heating on medium flame.
- When flour exudes aroma, and very lightly changes colour, take off fire.
- Allow flour to cool in pan.
- Add 1/2 can sweet corn cream style to flour.
- Add 1 tsp crushed herbs (mint, thyme, basil, oregano, rosemary, etc.) of choice.
- Add salt, pepper, green chillies to taste.
- Mix well with hand, to blend the flour and no lumps are left.
- Return to heat, stirring continuously, till mixture is thick.
- Take off fire, cool a little.
- Put dollops of corn mixture on slices of bread or toast.
- Sprinkle with grated cheese, grill or bake in preheated on (150 C) for 4-5 minutes.
- Serve hot and crisp.
