Ingredients:
• 3 – Bitter gourds
• 2 – Onions chopped
• 1 tsp – Ginger paste
• 2 tbsp – Coconut paste
• 3 – Green chilli
• 1 tsp – Mustard Seeds
• 1/2 tsp – Turmeric powder
• 2 tbsp – oil
• Salt to taste.
Method:
- Scrape the bitter gourds then cut into small pieces.
- Heat oil in a pan and add the mustard seeds.
- When they begin to splutter, add the onions and green chilli and fry till brown.
- Add the ginger paste and saute for a few minutes.
- Mix in the bitter gourd, coconut, turmeric and salt and mix well.
- Add 1 cup of water and cook on low heat till the bitter gourd is cooked and all the water dries up.
- Serve hot.
