Ingredients:
• 500 gms – Chicken thighs
• 200 gms – Cabbage, cut into 2cm square
• 80 gms – Leeks or Spring onions, finely cut
• 200 gms – Shredded cheese
• Oil for frying

• Mustardnaise:
• 300 gms – Mayonnaise
• 30 gms – Mustard sauce
• 180 ml – Fresh Cream
• 40 gms – Onions, finely chopped
• 5 gms – Parsley, finely chopped
Method:
- Season the chicken with salt and pepper.
- Heat oil in a frying pan and cook the chicken until skin is golden brown and crispy.
- Remove from pan and slice into 1-inch cubes. Keep warm.
- Fry the cabbage in pan for 2 mins. Season with salt and pepper.
- Divide onto four plates and place the cut chicken on top.
- Spread mustardnaise (made by mixing all ingredients together) on the chicken and sprinkle with cheese.
- Place each plate under a hot grill till cheese melts and mustardnaise is hot.
- Serve garnished with leeks.
