Ingredients:

• 1 kg – New Zealand lamb chops
• 200 g – Zucchini
• 200 g – yellow squash
• 100 g – Carrot
• 100 g – colour pepper
• 200 g – Broccoli
• 50 ml – brown sauce
• 25 ml – Olive oil
• 25 g – chopped herbs
• 50 g – sliced Onion
• 25 ml – red wine
• salt and pepper to taste

Method:

  1. Marinate the lamb chops with olive oil, chopped herbs, salt and pepper. Keep aside for 10 min.
  2. Marinate the vegetables and grill it.
  3. Grill the lamb chops to the desired doneness.
  4. Arrange the grilled vegetables and lamb chops in a plate.
  5. Pour the rich onion sauce. Garnish with colour peppers and carrot juliennes.
  6. For rich onion sauce:
  7. Saute the sliced onion.
  8. Add red wine and reduce it.
  9. Add brown sauce and add seasonings.
