Ingredients:

• Basmati Rice – 2 cup
• Soya chunks – 1/2 cup
• Ghee – 1/2 cup
• Onion – 1 (sliced)
• Green chillies – 6-8 (sliced)
• Cloves, Cardamoms, Cinnamon, Bay Leaves – 2 (each)
• Fresh Coconut Milk – 3 cups.
• Ginger Garlic paste – 1 tbsp.
• Coriander leaves – 1 tbsp. (finely chopped)

Method:

  1. Soak the soya chunks in hot water for 5 mins. Heat ghee in a pressure cooker. Add the spices, after they splutter add onion and green chilli. Fry for 2 mins, then add ginger-garlic paste.
  2. Add the soya and coconut milk. Allow the milk to boil.
  3. Add washed rice.
  4. Finally, add coriander leaves and salt as per taste. Pressure cook for 6-7 mins. Now the soya ghee rice is ready, serve with butter chicken or gobi manchurian.
