
Ingredients:
• Chopped Brinjal – 6 to 8
• Chopped Onion – 1
• Chopped Tomatoes – 2
• Turmeric powder – 1/2 tsp
• Red Chilli powder – 1/2 tsp
• Ginger paste – 1 tsp
• Garlic paste/powder – 1/2 tsp
• Sugar – 1 tsp
• Chopped Coriander leaves
• Spices to taste
• Salt as per taste
Method:
- Cut the brinjals into circular/semi-circular slices
- Keep them in water to retain its colour.
- Fry the chopped onion with 3 – 4 tsps of oil
- Fry till onion is slightly pink in colour
- Add chopped tomatoes to it and fry them too
- Add salt, turmeric powder, spices, ginger paste and garlic powder to it
- Stir it properly
- Keep this paste separately
- Heat the pan and add 3 – 4 tsps of oil
- Add the chopped brinjal slices, and fry them till they are properly cooked
- Add the prepared paste of tomato and onion to the fried brinjal
- Stir it well
- Add sugar as per the taste
- Stir it well till the vegetable is cooked
- Add coriander leaves and serve.
