
Ingredients:
• 100 gms – Brinjal (de-skinned, roasted and finely chopped)
• 1 tbsp – chopped Onions
• 1 tbsp – Dahi
• 1 tbsp – ginger-garlic paste
• 1 pinch – cumin
• 1 pinch – rai (mustard seed)
• 1tbsp – chopped coriander
• 1tbsp – Red Chilli
• 1 pinch – Haldi powder
• 1 pinch – dhania/coriander powder
• 1 pinch – salt for taste
• 1 pinch – chat masala
• 1 tbsp – fresh Tomato ketchup
• 1/2 tbsp – oil
Method:
- Heat oil in a pan, add rai and cumin and wait till they crackle.
- Add chopped onions and saute till it becomes brown.
- Add ginger-garlic and dahi.
- Stir for 2 mins.
- Now add rest dry masalas including salt and tomato ketchup.
- Mix the ingredients and ensure the masala is cooked.
- Add the roasted chopped brinjal and mix well.
- Cook for 2- 3 mins more.
- Add coriander to garnish.
- Place the sabji on paratha and roll.
