Ingredients:

• 5-6 – thick Green chillies
• 1 – thin Brinjal
• 3 tbsp – roasted Peanuts
• 1 tbsp – Vinegar
• Curry leaves
• 3 tbsp – oil
• 1 tbsp – jeera/cumin
• 1 tsp – Mustard Seeds
• 2 – Onions to make a paste
• 2 tsp – coriander powder
• 1 tsp – salt
• 1/4 tsp – Red Chilli powder
• 1/2 tsp – amchoor/mango powder
• 1/4 tsp – Garam Masala
• 1 cup – Tomato puree
• 1/2 tsp – Ginger paste

Method:

  1. Grind the peanuts with 1/2 cup water to a paste.
  2. Slit chillies, remove the seeds.
  3. Rub 1/2 tsp salt and 1 tbsp vinegar.
  4. Slit the brinjal, sprinkle salt.
  5. After 15 mins wash and pat dry.
  6. Mix 1 tbsp oil, brinjal and chillies.
  7. Spread on a greased tawa.
  8. Put tawa on a high rack.
  9. Grill for 5 minutes.
  10. Microwave 2 tbsp of oil, jeera, mustard, curry leaves, ginger paste and onion with all spices for 7 minutes.
  11. Add tomato puree.
  12. Microwave for 4 minutes.
  13. Add peanuts paste, 1 cup of water, brinjal and chillies; mix well.
  14. Microwave covered for 5 minutes.
  15. Garnish with coriander leaves and roasted peanuts.
