Ingredients:

• 1 large – Brinjal or Eggplant
• 1/2 – Onion chopped
• 1/2 tbsp – sambar powder
• 1/4 tbsp – Mustard Seeds
• 1/2 tbsp – Urad Dal
• 1/4 tbsp – Toor Dal
• 4 – dry Red Chillies
• 1/4 tsp – Turmeric
• Salt – to taste
• 1/2 cup – Tamarind extract
• 1 tbsp – oil
• 4-5 – Curry leaves

Method:

  1. Heat oil in a kadai and splutter the mustard and saute the urad dal, toor dal, dry chillies and turmeric. Now add the onion to this and saute until pink
  2. Pour the tamarind extract in the kadai and add the curry leaves, salt, sambar powder and let it boil for 5-6 mins
  3. In the meanwhile, heat the brinjal in a pan and peel the skin off and mash it with a spatula
  4. Add this to the boiling tamarind and mix well. Boil for 5 mins
  5. Serve with rice
