Ingredients:
• 1 large – Brinjal or Eggplant
• 1/2 – Onion chopped
• 1/2 tbsp – sambar powder
• 1/4 tbsp – Mustard Seeds
• 1/2 tbsp – Urad Dal
• 1/4 tbsp – Toor Dal
• 4 – dry Red Chillies
• 1/4 tsp – Turmeric
• Salt – to taste
• 1/2 cup – Tamarind extract
• 1 tbsp – oil
• 4-5 – Curry leaves
Method:
- Heat oil in a kadai and splutter the mustard and saute the urad dal, toor dal, dry chillies and turmeric. Now add the onion to this and saute until pink
- Pour the tamarind extract in the kadai and add the curry leaves, salt, sambar powder and let it boil for 5-6 mins
- In the meanwhile, heat the brinjal in a pan and peel the skin off and mash it with a spatula
- Add this to the boiling tamarind and mix well. Boil for 5 mins
- Serve with rice
