Ingredients:
• Brinjal (eggplant) -6 – 7
• Cauliflower -3 -4
• Green pigeon peas (toor dal) -1/2 cup
• Red Chilli powder -2 tea spoon
• Turmeric powder- 1/2 tsp.
• Dhania powder- 1 tsp.
• Roasted Groundnut powder- 2 tsp.
• Ginger- 1/2 tsp. (paste)
• Garlic- 1/2 tea spoons (paste)
• Oil -1 tbsp
• Mustard seeds- 1/2 tsp.
• Cumin seeds -1/2 tsp.
• Salt
Method:
- First boil green pigeon peas (toor dana green) for 5 min.
- Then heat 1 table spoon of oil in a pan or kadai.
- Then put mustard and cumin seeds, allow them to pop for a while, then add ginger and garlic.
- Put brinjal (eggplant), cauliflower and boiled green pigeon peas and allow them to cook for 6 to 7 min.
- Then add all the masalas in to it, and stir the mixture slowly. Then add the salt in to it. This vegetable is now ready to serve.
- Garnish it with green dhania.
- Serve the above vegetable with chapati or rice.
