Ingredients:

• Brinjal (eggplant) -6 – 7
• Cauliflower -3 -4
• Green pigeon peas (toor dal) -1/2 cup
• Red Chilli powder -2 tea spoon
• Turmeric powder- 1/2 tsp.
• Dhania powder- 1 tsp.
• Roasted Groundnut powder- 2 tsp.
• Ginger- 1/2 tsp. (paste)
• Garlic- 1/2 tea spoons (paste)
• Oil -1 tbsp
• Mustard seeds- 1/2 tsp.
• Cumin seeds -1/2 tsp.
• Salt

Method:

  1. First boil green pigeon peas (toor dana green) for 5 min.
  2. Then heat 1 table spoon of oil in a pan or kadai.
  3. Then put mustard and cumin seeds, allow them to pop for a while, then add ginger and garlic.
  4. Put brinjal (eggplant), cauliflower and boiled green pigeon peas and allow them to cook for 6 to 7 min.
  5. Then add all the masalas in to it, and stir the mixture slowly. Then add the salt in to it. This vegetable is now ready to serve.
  6. Garnish it with green dhania.
  7. Serve the above vegetable with chapati or rice.
