
Ingredients:
• 2 Egg whites
• 100 gms. Ground Almonds
• 75 gms. Caster Sugar
• 25 gms. Ground Rice
• Dew drops Almond essence
• 16 blanched Almond halves
Method:
- Line baking trays with rice paper.
- Pre-set oven to 150 degrees C.
- Whisk egg white until it forms soft peaks.
- Fold in ground almonds, sugar, ground rice and the almond essence.
- Mix well.Shape into 16 balls.
- Place on the rice paper and press lightly to flatten.
- Top each with a halved almond.
- Brush with egg white and bake for 25-30 mins. until pale gold.
- Leave to cool before tearing away the rice paper.
