Ingredients:

• 2 Egg whites
• 100 gms. Ground Almonds
• 75 gms. Caster Sugar
• 25 gms. Ground Rice
• Dew drops Almond essence
• 16 blanched Almond halves

Method:

  1. Line baking trays with rice paper.
  2. Pre-set oven to 150 degrees C.
  3. Whisk egg white until it forms soft peaks.
  4. Fold in ground almonds, sugar, ground rice and the almond essence.
  5. Mix well.Shape into 16 balls.
  6. Place on the rice paper and press lightly to flatten.
  7. Top each with a halved almond.
  8. Brush with egg white and bake for 25-30 mins. until pale gold.
  9. Leave to cool before tearing away the rice paper.
