
Ingredients:
• 3 – eggs
• 1/2 cup – ground Almonds
• 1/2 cup – Milk powder
• 1 cup – Sugar
• 1/2 tsp – Saffron strands
• 100g – Butter
• 1 tbsp – flaked Almonds
Method:
- Beat the eggs together in a bowl and set aside.
- Place the ground almonds, milk powder, sugar and saffron in a large bowl and stir to mix well.
- Melt butter in a small saucepan and pour over the dry ingredients.
- Mix well with a fork.
- Add the beaten eggs to the almond mixture and stir to blend well.
- Spread the mixture in a shallow oven-proof dish and bake in a pre-heated oven at 160 degrees C for 45 minutes.
- Test whether the cake is cooked by piercing with the tip of the knife or a skewer- it will come out clean if it is cooked thoroughly.
- Once it has cooled, cut the almond cake into slices.
- Decorate the almond slices with flaked almonds and transfer them into serving plates.
- Serve hot or cold.
