Ingredients:
• 90 g – rolled oats
• 150 g – Plain flour
• 220 g – Caster Sugar
• 60 g – Desiccated Coconut
• 125 g – Butter chopped
• 1 tbsp – Golden Syrup
• 11/2 tsp – Bicarbonate of soda
• 2 tbsp – Boiling water.
Method:
- Preheat the oven to 150 degree Celsius.
- Grease and line a baking tray.
- Combine oats, flour, sugar and coconut in a large bowl.
- Meanwhile stir butter and the syrup in a small saucepan over low heat until smooth.
- Now combine the soda and the boiling water.
- Add this to the butter mixture.
- Stir it into the dry ingredients while warm.
- Now place the mixture on the tray. Pour a levelled tablespoon for each portion.
- Place them 5 cm apart and press lightly.
- Bake for 25 mins.
- Remove the biscuits while warm.
- Cool and serve.
