Ingredients:

• 90 g – rolled oats
• 150 g – Plain flour
• 220 g – Caster Sugar
• 60 g – Desiccated Coconut
• 125 g – Butter chopped
• 1 tbsp – Golden Syrup
• 11/2 tsp – Bicarbonate of soda
• 2 tbsp – Boiling water.

Method:

  1. Preheat the oven to 150 degree Celsius.
  2. Grease and line a baking tray.
  3. Combine oats, flour, sugar and coconut in a large bowl.
  4. Meanwhile stir butter and the syrup in a small saucepan over low heat until smooth.
  5. Now combine the soda and the boiling water.
  6. Add this to the butter mixture.
  7. Stir it into the dry ingredients while warm.
  8. Now place the mixture on the tray. Pour a levelled tablespoon for each portion.
  9. Place them 5 cm apart and press lightly.
  10. Bake for 25 mins.
  11. Remove the biscuits while warm.
  12. Cool and serve.
