Ingredients:
• For the pie dough:
• 2 cups – all purpose flour
• 1/2 tsp – salt
• 1 tsp – baking powder
• 3 tbsp – Sugar
• 3/4 cup – soft Butter
• 1 – Egg
• 3-4 tbsp – Cream
• For the pie:
• 5 apples, hollowed, peeled and sliced
• 1/2 cup – Sugar
• 1 tbsp – Corn starch
• 1/2 cup – sour Cream
• 2 – eggs
Method:
- For the pie dough:
- Sift the flour, salt, and baking powder into a mixing bowl.
- Make a well in the middle of the flour.
- Add the sugar, the butter and the egg to the well.
- Little by little, incorporate flour to the butter, sugar, and egg.
- Once the dough becomes dry, add the cream and form a ball.
- Knead the dough twice before using.
- For the pie:
- Pre-heat the oven to 400 degrees F.
- Roll half of the dough.
- Place the dough in a pie plate that is 1.5 inch high and preferably has a removable bottom.
- Prick the bottom of the pie shell with a fork and brush with beaten egg.
- Place the apples in a mixing bowl.
- Add the sugar and the corn starch. Mix the ingredients well.
- Fill the pie shell with the apple mixture.
- Cook in the oven at 400 degrees F for 25 to 30 mins.
- Place the sour cream and the eggs in a mixing bowl.
- Beat well with a whisk. Remove the pie from the oven after 25-30 mins. of cooking time.
- Pour the sour cream mixture over the apples.
- Replace the pie in the oven and cook for an additional 20 mins. at 350 degrees F.
