Ingredients:
• For the Sandesh:
• 200 g – fresh Cottage cheese (paneer)
• 4-5 tbsp – powdered Sugar
• 2.5 tbsp – Milk
• A few drops – rose or kewra essence
• For the filling:
• 2- grated Apple
• 1/2 tsp – Lime juice
• 6-8 tsp – Sugar
• Saffron stands a few soaked in 2 tbsp hot water.
Method:
- Put the grated apple, sugar, lime juice and soaked saffron into a pan. Cook on low heat till the apple is done and the mixture turns slightly dry. Switch off heat and let it cool.
- Take the cottage cheese in a bowl and mash finely.
- Add the powdered sugar, milk and essence and mix very well. Do a taste test to make sure it is sweet enough.
- Add more sugar if needed.
- Take off a small ball and flatten it. Take a spoonful of apple filling and place in the centre. Carefully cover the apple mixture and shape it as desired. Serve cold.
