Ingredients:

• 1/2 cup – chopped Raw banana (vazhakaai) (lengthwise)
• 1/2 cup – chopped Potato (lengthwise)
• 1/2 cup – chopped Carrot (lengthwise)
• 1/2 cup – chopped Brinjal (lengthwise)
• 1/2 cup – chopped Snake gourd (Pudalangai) (lengthwise)
• 1/2 cup – chopped Cucumber (lengthwise)
• 1 – chopped Drumstick
• 1/2 tsp – Tamarind
• Salt to taste
• 1/4 tsp – Turmeric
• Ingredients for Grinding:
• 1 cup – Coconut
• 1 tsp – raw Rice
• 1/2 tsp – Cumin seeds
• 3 – Red Chillies
• 5 – Green chillies
• For Seasoning:
• 1 ladle – Coconut oil
• Curry leaves – few

Method:

  1. Cut all the vegetables length wise and keep it aside.
  2. Cook the vegetables in a heavy bottomed vessel by adding water and turmeric.
  3. Soak the tamarind in water and extract the juice. Soak the raw rice in water for some time.
  4. Take the coconut with soaked rice, red chillies and green chillies and cumin seeds in a mixer.
  5. Grind the coconut with soaked rice, red chillies and green chillies and cumin seeds into a fine paste.
  6. When the vegetables are half cooked add the tamarind extract and salt and let the mixture boil till the vegetables are fully cooked.
  7. Then add the ground paste and when the mixture starts boiling switch off the flame.
  8. Add the coconut oil and curry leaves.
  9. The delicious Aviyal Kuzhambu is ready to serve with plain rice.
