
Ingredients:
• 3 cups – fish (cooked and boned)
• 8 tomatoes, thinly sliced
• 2 capsicums, thinly sliced
• 2 onions, thinly sliced
• 1 bunch – coriander leaves, chopped
• 4 Cloves – garlic, crushed
• 4 tbsp – grated cheese
• 4 tbsp – breadcrumbs
• 1 tsp – freshly ground pepper
• 1 1/2 tsp – chilli powder
• salt to taste
Method:
- Grease a baking dish.
- Cover the bottom with half the quantity of onions, coriander, capsicum, garlic and tomatoes.
- Sprinkle with half the quantity cheese and half the quantity chilli powder, salt to taste and pepper.
- Arrange the fish evenly over the layer of cheese and seasonings.
- Cover the fish with the remaining cheese, sprinkled with the remaining chilli powder, pepper and salt.
- Cover with the remaining chilli powder, pepper and salt.
- Cover with the remaining vegetables in the same order as before.
- Sprinkle the top with breadcrumbs and dot with butter.
- Cover with aluminium foil and bake in a mode oven for 30 mins.
