Ingredients:

• Palak, shredded – 1 bunch
• Onion, finely shredded – 2 medium
• Tomato chopped – 2 medium
• Slit Green chilli – 3
• Garlic, chopped – 3
• Red Chilli powder – 1 tsp
• Coriander, cumin powder – 1 tsp
• Garam Masala – 1/2 tsp
• Sugar – 1/2 tsp
• Sliced Tomatoes and grated cheese for garnishing
• For Rice
• Basmati Rice – 1 cup
• Cardamom – 2
• Cloves – 3
• Cinnamon – 1 inch piece
• Bay Leaf – 1
• Ghee – 1 tbsp

Method:

  1. Wash the rice and drain
  2. Heat ghee in a cooker, add bay leaves, cinnamon, cloves and cardamom and fry.
  3. Add the drained rice and fry for a while
  4. Add 2 cups water and pressure cook
  5. Keep the cooked rice aside
  6. In a kadai, heat 2 tsp, oil fry the onions till translucent, add garlic and the tomatoes and fry till the tomatoes become mushy
  7. Add the shredded palak and keep frying till the mixture blends well and cooked
  8. Add the dry spices and mix well.
  9. In a greased baking dish, spread half the cooked rice at the bottom.
  10. Top it with half palak mixture
  11. Add the other half of cooked rice
  12. Top with the remaining palak mixture.
  13. Garnish with sliced tomatoes and grated cheese, cover with an aluminium foil and bake for 15 / 20 mins at medium heat.
  14. Serve hot.
