Ingredients:
• Palak, shredded – 1 bunch
• Onion, finely shredded – 2 medium
• Tomato chopped – 2 medium
• Slit Green chilli – 3
• Garlic, chopped – 3
• Red Chilli powder – 1 tsp
• Coriander, cumin powder – 1 tsp
• Garam Masala – 1/2 tsp
• Sugar – 1/2 tsp
• Sliced Tomatoes and grated cheese for garnishing
• For Rice
• Basmati Rice – 1 cup
• Cardamom – 2
• Cloves – 3
• Cinnamon – 1 inch piece
• Bay Leaf – 1
• Ghee – 1 tbsp
Method:
- Wash the rice and drain
- Heat ghee in a cooker, add bay leaves, cinnamon, cloves and cardamom and fry.
- Add the drained rice and fry for a while
- Add 2 cups water and pressure cook
- Keep the cooked rice aside
- In a kadai, heat 2 tsp, oil fry the onions till translucent, add garlic and the tomatoes and fry till the tomatoes become mushy
- Add the shredded palak and keep frying till the mixture blends well and cooked
- Add the dry spices and mix well.
- In a greased baking dish, spread half the cooked rice at the bottom.
- Top it with half palak mixture
- Add the other half of cooked rice
- Top with the remaining palak mixture.
- Garnish with sliced tomatoes and grated cheese, cover with an aluminium foil and bake for 15 / 20 mins at medium heat.
- Serve hot.
