Ingredients:

• 1 – whole salmon
• 3 cups – Milk
• 1/2 cup – plain flour
• 1 tbsp – Butter
• 2 tbsp – cheese grated
• Salt to taste
• Pepper to taste
• 1/4 cup – chopped Spring onion
• 1/4 tsp – Oregano

Method:

  1. Dry roast the flour till light pinkish in colour. Remove and keep aside to cool.
  2. Melt butter in the pan.
  3. Add half the milk.
  4. Mix the remaining milk in the cooled flour to form a smooth paste.
  5. When milk comes to a boil, add paste and stir continuously.
  6. Bring back to a boil.
  7. Add spring onion.
  8. Cook till the sauce is thick enough to coat the back of a spoon thickly.
  9. Sprinkle salt and fresh ground pepper and stir to mix well.
  10. Put salmon in a baking dish.
  11. Pour the sauce.
  12. Sprinkle oregano.
  13. Bake at 350 degrees centigrade for 30 mins.
  14. Add grated cheese to the mixture.
  15. Serve with chips.
