Ingredients:

• 20 to 25 – tender plump healthy Okra
• 1 tsp – Lemon juice
• 1/4 tsp – Turmeric powder
• 1/4 tsp – tandoori masala
• 1/2 tsp – Sugar
• 1/4 tsp – dried Mint powder
• 1/4 cup – Curd (hung for 45 minutes)
• 1 tsp – Olive oil
• To taste – salt

Method:

  1. Wash and wipe okra, checking and discarding any infected ones.
  2. Mix all the other ingredients together, in a large bowl.
  3. Put in okra and toss to coat with the marinating mixture.
  4. Keep aside for 30 minutes or refrigerate, till required.
  5. Pierce the okras from side to side into a skewer.
  6. Place over hot coals or barbeque or under a grill.
  7. Rotate occasionally and cook enough, to tenderize.
  8. Brush, with a little oil in between, if required.
  9. Serve hot, with other barbequed vegetables, dips and rice.
