Ingredients:

• 1 – Beef tongue
• 2 tbsp – Vinegar
• 6 – red dry chillies
• 1 tsp – Cumin seeds
• 1 – Turmeric
• 2 – medium Onions
• 4 – medium Green chillies
• 6 flakes – Garlic
• 1 piece – Ginger
• Salt – to taste
• 3 cups – water
• 6 – Cloves
• 1 piece – Cinnamon
• 3 tbsp – Ghee
• For Seasoning:
• 2 tbsp – Sugar
• 4 – large Potatoes

Method:

  1. Clean and scrape the tongue, and cut it in slices.
  2. Grind red dry chillies, cumin, turmeric, onions, green chillies, garlic and ginger in vinegar.
  3. Boil the tongue in water, with cloves and cinnamon and salt to taste, till well cooked.
  4. Remove the tongue from the gravy and keep aside.
  5. In another vessel, heat the ghee and brown the cooked tongue.
  6. Remove the meat, and in the same ghee, fry the ground masala, stirring all the time.
  7. Sprinkle a little water on the masala once or twice.
  8. Then add the meat, the gravy, and stir. Put sugar, vinegar and salt to taste.
  9. Peel the potatoes, cut them in slices and boil till the potatoes turn soft.
