
Ingredients:
• Lady fingers – 1 kg
• Chick pea flour – 1 cup
• Red Chilli powder – 2 tsp
• Ajwain (carum seeds) – 1 tsp
• Rice powder – 2 tbsp
• Coriander powder – 2 tbsp
• Turmeric powder – 1 tsp
• Dry Mango powder – 1 tsp
• Garam Masala powder – 1 tsp
• Salt to taste
• Oil for frying
Method:
- Wash and dry the okra.
- Chop off heads and talks of the okra and slit lengthwise into 4.
- Take 1/2 cup of chick pea flour and mix all the ingredients together in a bowl except rice powder and oil.
- Add the okra to the bowl, mix well and refrigerate for 2 hours.
- Mix remaining 1/2 cup of chick pea flour with rice powder and toss with the okra.
- Heat oil and deep fry in batches until crisp.
- Serve hot.
