
Ingredients:
• 500 g – Okra
• 6 – medium Onions
• 6 – Green chillies
• 4 – medium Tomatoes
• 6 tbsp – oil
• 3 tsp – Garam Masala
• 3 tsp – Turmeric powder
• 3 tsp – coriander powder
• 3 tsp – salt
• 3 tsp – dried Mango powder (amchoor)
• 30 – 50 leaves – green coriander leaves, chopped
Method:
- Wash the okra and dry with a towel. Cut the top and tail from them.
- Split lengthwise, leaving one side joined.
- Mix all the condiments and salt in a small plate and use this to fill the split okra.
- Chop the onions and tomato lengthwise.
- Warm the oil in a microwave safe glass dish for 2 mins.
- Place the masala-filled okra, chopped tomatoes, chopped onions and whole green chillies in the oil and mix well with a wooden spatula.
- Sprinkle the leftover masala on the okra.
- Microwave on high for 15 minutes. Remove the dish, mix well with the spatula, and if the vegetables appear dry and uncooked, add 1/4 cup of water by sprinkling it on the vegetables and mixing again with the spatula.
- Microwave again for 15 minutes on high.
- Garnish with green coriander and serve hot.
