Ingredients:

• 2 cups – Brinjal (chopped)
• 1 cup – Cluster bean (chopped)
• 1/2 cup – Onion (finely chopped)
• 2 Cloves – Garlic (finely chopped)
• 2 tsp – Sambar powder
• 2 tsp – Red Chilli powder
• 3 tsp – Tamarind juice
• 1 tsp – Mustard
• Salt to taste
• 6 tsp – Oil
• A few Curry leaves

Method:

  1. Cook cluster bean with salt and keep aside.
  2. In a pan, add oil. Then add mustard.
  3. Add garlic and onion, fry them well till they turn golden brown.
  4. Now, add salt, sambar powder, red chilli powder and brinjal pieces.
  5. Mix them well. Medium the stove.
  6. Fry for few minutes, till brinjal changes to brown colour.
  7. Now add tamarind juice and cooked cluster bean. Mix them well.
  8. close the pan with a lid. Cook on medium heat for 20 minutes.
  9. Garnish with curry leaves.
  10. Serve hot with rice or chapatti.
