Ingredients:
• 2 cups – Brinjal (chopped)
• 1 cup – Cluster bean (chopped)
• 1/2 cup – Onion (finely chopped)
• 2 Cloves – Garlic (finely chopped)
• 2 tsp – Sambar powder
• 2 tsp – Red Chilli powder
• 3 tsp – Tamarind juice
• 1 tsp – Mustard
• Salt to taste
• 6 tsp – Oil
• A few Curry leaves
Method:
- Cook cluster bean with salt and keep aside.
- In a pan, add oil. Then add mustard.
- Add garlic and onion, fry them well till they turn golden brown.
- Now, add salt, sambar powder, red chilli powder and brinjal pieces.
- Mix them well. Medium the stove.
- Fry for few minutes, till brinjal changes to brown colour.
- Now add tamarind juice and cooked cluster bean. Mix them well.
- close the pan with a lid. Cook on medium heat for 20 minutes.
- Garnish with curry leaves.
- Serve hot with rice or chapatti.
