Ingredients:
• 1 cup – Toovar (red gram ) Dal
• 250 g – brinjal, quartered
• 1 cup – green mango, chopped
• 1/2 cup – onion, finely chopped
• 1/4 cup – onion, sliced
• 10 to 12 – green chillies, sliced
• 2 tsp – coriander powder
• 3 tbsp – oil (preferably ground nut)
• 1 tsp – mustard
• 1 tsp – cumin
• 2 red chilli, broken into pieces
• 1 tbsp – garlic, finely chopped
• 2 tsp – Ghee, optional
• few Curry leaves
• salt to taste
Method:
- Cook Toovar Dal till very soft and mash well.
- Cook brinjals with sliced onion, green chillies and coriander powder with 1 cup of water.
- Add mango pieces, salt and cook till soft.
- Add the Dal and enough water to get thick pouring consistency. Simmer for 2-3 minutes.
- Heat the oil in a small Kadai or fry pan. Add mustard and cumin.
- When they splutter, add red chillies and curry leaves. Add garlic.
- When it turns golden brown, add onion.
- Fry till onion is brown and add the contents to the Dal. Mix well.
- Pour in the Ghee (optional) and serve hot with steamed rice.
