
Ingredients:
• 250 g – green, tender, long Brinjal
• 1/2 cup – Curd
• 1/2 tsp – Ginger paste
• 1/2 tsp – Garlic paste
• 1/2 tsp – Green chilli paste
• Coriander sprigs – 1/2 bunch chopped)
• 1 sprig – Curry leaves
• 2 tsp – poppy seed paste
• 1/2 tsp – Turmeric powder
• 1 tbsp – coriander cumin powder
• 1/2 tsp – Garam Masala
• A pinch – Sugar
• 1/2 cup – water
• Salt
• Oil
Method:
- Wash the brinjal and cut it lengthwise, vertically. Mix together ginger paste, garlic paste, green chilli paste, salt, turmeric powder, coriander cumin powder, garam masala and chopped coriander
- Fill this mixture in the slit
- In a kadai, heat oil and shallow fry the brinjals
- Fry till the brinjals are tender and keep aside
- Take aside these fried brinjal.
- In the remaining oil, add curry leaves and poppy seeds paste to the oil
- Fry for a few seconds.
- Add curd in the pan, stirring continuously
- Add water
- Gently drop the fried brinjal into the gravy
- Turn the brinjal and fry for a few min.
- Add a pinch of sugar to taste
- Garnish with coriander leaves
