Ingredients:

• 250 g – green, tender, long Brinjal
• 1/2 cup – Curd
• 1/2 tsp – Ginger paste
• 1/2 tsp – Garlic paste
• 1/2 tsp – Green chilli paste
• Coriander sprigs – 1/2 bunch chopped)
• 1 sprig – Curry leaves
• 2 tsp – poppy seed paste
• 1/2 tsp – Turmeric powder
• 1 tbsp – coriander cumin powder
• 1/2 tsp – Garam Masala
• A pinch – Sugar
• 1/2 cup – water
• Salt
• Oil

Method:

  1. Wash the brinjal and cut it lengthwise, vertically. Mix together ginger paste, garlic paste, green chilli paste, salt, turmeric powder, coriander cumin powder, garam masala and chopped coriander
  2. Fill this mixture in the slit
  3. In a kadai, heat oil and shallow fry the brinjals
  4. Fry till the brinjals are tender and keep aside
  5. Take aside these fried brinjal.
  6. In the remaining oil, add curry leaves and poppy seeds paste to the oil
  7. Fry for a few seconds.
  8. Add curd in the pan, stirring continuously
  9. Add water
  10. Gently drop the fried brinjal into the gravy
  11. Turn the brinjal and fry for a few min.
  12. Add a pinch of sugar to taste
  13. Garnish with coriander leaves
