Ingredients:

• 1 head – Broccoli, chopped into bite-sized florets
• 1 cup each- golden Raisins and Almonds (chopped)
• 250gm boneless Chicken breast, poached
• 2 cups low fat mayonnaise
• Sugar to taste
• 1 tbsp – Lemon juice

Method:

  1. In a bowl, whip together mayonnaise, sugar, and lemon juice.
  2. Add broccoli, pieces of chicken breast, raisins, and chopped almonds and stir well.
  3. Chill and serve.
