Ingredients:
• For filling
• 100 g – spring onions, finely chopped
• 4 – chillies
• 100 g – grated cheddar cheese.
• For seasoning
• 1/2 tsp – ajinomoto
• salt
• pepper
• For dough
• 1 cup – Maida
• 1/2 tsp – salt
• water
• 1 tbsp – oil
• For dipping sauce
• 1 cup – white Vinegar
• 1 cup – castor Sugar
• 1 – small green Cucumber chopped
• 1 – small Carrot grated
• 1 tbsp – chopped chives
• 1 pinch – paprika
Method:
- Mix all the ingredients for the filling and keep aside. Divide dough into 20 portions.
- Roll out each into a small thin puri.
- Put the stuffing in the middle and shape the puris like momos or wontons and deep fry in oil. Serve with a sweet dipping sauce.
- Sweet dipping sauce:
- Combine 1 cup white vinegar and 1 cup castor sugar in a small saucepan. Stir over heat without boiling until sugar has dissolved. Bring to boil.
- Don’t stir for about 3 minutes or until this thickens slightly.
- Cool for 5 minutes.
- Add 1 small green cucumber (chopped) , 1 small carrot (grated), 1 tbsp chopped chives and let this cool off in a small bowl. Sprinkle with paprika before serving.
