Ingredients:

• 4 tbsp – Butter
• 4 tbsp – Refined flour
• 1 cup – Milk
• 1/2 tsp – salt
• 250 g – grated cheese
• 4 – Egg yolks,beaten
• 4 – Egg whites, beaten till stiff
• 1/2 tsp – salt

Method:

  1. Melt the butter on a low flame, add the flour and blend well.
  2. Add the milk slowly and stir constantly till the sauce is thick and smooth.
  3. Add the grated cheese and salt.
  4. Gradually add the egg yolks and mix well.
  5. Remove from fire and fold in the egg whites.
  6. Pour into a souffle dish and bake in a moderate oven at 240 degrees C for 30 mins
