
Ingredients:
• 4 tbsp – Butter
• 4 tbsp – Refined flour
• 1 cup – Milk
• 1/2 tsp – salt
• 250 g – grated cheese
• 4 – Egg yolks,beaten
• 4 – Egg whites, beaten till stiff
• 1/2 tsp – salt
Method:
- Melt the butter on a low flame, add the flour and blend well.
- Add the milk slowly and stir constantly till the sauce is thick and smooth.
- Add the grated cheese and salt.
- Gradually add the egg yolks and mix well.
- Remove from fire and fold in the egg whites.
- Pour into a souffle dish and bake in a moderate oven at 240 degrees C for 30 mins
