Ingredients:
• 2 cups – graham cracker crumbs
• 1/3 cup – Sugar
• 1/2 tsp – ground Cinnamon
• 1/2 cup – Butter or margarine, melted
• For the Filling:
• 250 g – packaged Cream cheese, softened
• 1.5 cups – Sugar
• 1 tsp – vanilla extract
• 4 – eggs, separated
• Few – fresh fruit
Method:
- In a small bowl, combine the cracker crumbs, sugar and cinnamon. Stir in butter.
- Press into a greased 15 inch x 10 inch x 1 inch baking pan.
- Bake at 350 degrees F for 5 minutes.
- In a large mixing bowl, beat cream cheese, sugar and vanilla, until smooth.
- Add egg yolks and beat on low speed, just until combined.
- In a small mixing bowl, beat egg whites until, soft peaks form.
- Fold into the cream cheese mixture.
- Pour over the crust.
- Bake for 28 to 39 minutes or until the centre is almost set.
- Cool on a wire rack for 30 minutes.
- Refrigerate overnight.
- Garnish with fruit.
