Ingredients:
• 1.5 cups – spinach, blanched and chopped finely
• 1.5 cups – corn, boiled
• 2 cups – cheese, grated (or as required)
• 3 tbsp – Butter
• 3 tbsp – flour
• 3 cups – Milk
• 1 tsp – cracked black pepper
• salt to taste
Method:
- Melt the butter. Then add the maida and stir constantly.
- Cook till the raw smell of maida goes away.
- Be careful not to brown the maida.
- When the maida is done, add in the milk and whisk so you do away with any lumps.
- Add the pepper powder. Stir the white sauce until it becomes thick.
- Add in the spinach, boiled corn, and cheese, and mix it. Season it using salt and simmer for 5 to 7 minutes.
- Shift it to an ovenproof dish. Top it with some more grated cheese.
- Bake in a preheated oven at 200 degrees until the cheese melts and is slightly brown in colour.
