
Ingredients:
• 225g – plain flour
• 75g – Brown sugar
• 50g – ground Almonds
• 300 ml – Milk
• 50 ml – Sunflower oil
• 1 – Egg
• 100g – dried Cherries
• 3 tbsp – Lemon juice
• 1 tsp – baking powder
• 1 tsp – vanilla essence
• Almond flakes to decorate
• Honey to serve
Method:
- Preheat the oven to 190 degree Celsius. Grease and line a muffin tin with 12 muffin cases.
- Sift together flour and baking powder. Add the sugar, ground almonds and cherries, and mix well.
- Beat together egg, milk, oil, lemon juice and essence. Pour the wet ingredients into the dry ingredients, and stir well until they are just combined.
- The mixture should look lumpy. Do not over mix, or the muffins will get tough.
- Spoon the mixture into the prepared muffin cases. Sprinkle with flaked almonds.
- Bake in the preheated oven for 25 minutes until well risen. Take it out, leave it to cool in the tin for 5 minutes, transfer to a wire rack to cool.
