Ingredients:
• Chicken breast fillets, cut into 2 cm pieces – 500 gm
• Barley – 1/2 cup
• water – 4 cup
• coriander sprigs 8 to 10
• fresh root Ginger 3 piece
• soya oil – 1 tbsp
• garlic, minced – 2 tsp
• onion, chopped fine – 1/2 cup
• chili powder – 1/2 tsp
• cumin powder – 1 tsp
• Tomato puree – 1/2 cup
• fresh Lime juice – 3 tbsp
• Coriander leaves to garnish
• pepper to taste
• salt to taste
Method:
- Cover barley with water.
- Tie the coriander sprigs in a bunch and add to barley.
- Add root ginger. (Do not chop).
- Simmer till the barley is cooked.
- (Pressure cooker may be used to reduce the cooking time.)
- Lift out the coriander sprigs and ginger and discard.
- Heat olive oil, fry garlic till golden brown.
- Add onion and barley with the cooking liquid.
- Add chili and cumin powder, tomato puree, chicken, salt and pepper.
- Simmer till the chicken is cooked.
- Add lime juice and coriander leaves and serve hot.
