Ingredients:
• 1 kg – Chicken
• 2 – large chopped Onions
• 1 inch piece – Cinnamon
• 5 – Cardamoms
• 4 – dried, Red Chillies
• 5 – Cloves
• 1/2 tsp – pepper Corns
• 3 – Bay Leaves
• 1/2 tsp – garlic-ginger paste
• 2 tsp – salt
• Oil – 3 tbsp
• 1/2 tsp – Red Chilli powder
• 1/2 tsp – Turmeric powder
• 1/2 tsp – pepper
• 1/2 tsp – cumin powder
• 1/4 cup – soya sauce
• 2 cups – Rice
• 4 cups – water
Method:
- In a pressure cooker, fry chopped onions in 2 tbsp oil and add whole spices (cinnamon, cardamoms, red dried chillies, cloves, 1 tsp pepper corns, bay leaves).
- Saute and add the garlic-ginger paste and salt and fry well.
- Add the whole chicken and toss with the spices and fry for 2 mins, stirring gently.
- Add the water, cover and cook till the chicken is done
- Take the cooked chicken out and keep aside.
- Cook rice in this water and transfer on to a serving tray.
- Smear the cooked chicken with the red chilli, turmeric, cumin and pepper powders and the soya sauce and shallow fry in a frying pan in 2 tbsp oil.
- Turn over and ensure both sides are golden-brown.
- Place this cooked chicken on the rice tray and serve with a cold salad.
