Ingredients:

• For the Base:
• 90 g – plain sweet biscuits
• 1 tbsp – cocoa
• 45 g – Butter
• For the Filling:
• 250 g – Cream cheese
• 1/3 cup – Sugar
• 1 tsp – vanilla essence
• 1 tsp – gelatin
• 2 tsp – water
• 1 cup – Cream
• 6 – chocolate after-dinner mints
• 1 tbsp – water, extra

Method:

  1. For the base: Crush biscuits finely, add cocoa and mix well. Stir in melted butter.
  2. Press mixture onto sides and the base of the greased flan tin with removable base.
  3. Refrigerate while preparing filling.
  4. For the filling:
  5. Beat cream cheese, sugar and vanilla until smooth.
  6. Sprinkle gelatine over water, dissolve over hot water and cool.
  7. Add to the cream cheese mixture, beat well and fold in whipped cream.
  8. Spoon mixture evenly into the crumb’s crust.
  9. Dissolve mints with extra water on top of double saucepan over simmering water. Cool a little.
  10. Spoon chocolate mint mixture over cream cheese mixture and swirl lightly into mixture with spoon. Refrigerate until set.
