
Ingredients:
• 1 tsp – baking powder
• 80 g – cocoa powder
• 100 ml – cooking oil
• 8 – eggs
• 1 tsp – vanilla essence
• 800 g – Maida flour (refined)
• 300 g – Butter
• 1/2 tsp – soda bi-carbonate
• 400 g – sugar, browned
Method:
- Grease the cake tin with oil and dust with flour.
- Sieve in the flour, cocoa and baking powder.
- Cream the butter, oil and soda bicarb.
- Blend and add the sugar and whisk until light and fluffy.
- Add 2 eggs at a time, whisking well after each addition.
- Add the flour, then the vanilla essence and beat well.
- Pour onto the prepared tin.
- Bake in a preheated oven until done.
- When the cake cools, wrap in the pan with foil. Sandwich the cake with cocoa butter cream.
