Ingredients:
• 1 1/2 cups – cooked Corn kernels
• 1 1/2 to 2 cups – white sauce
• 3 tbsp – chopped Onion
• 1 tbsp – Butter
• 2 tbsp – chopped Capsicum
• 2 tbsp – chopped Celery
• 3 tbsp – Ground cheese
• salt, pepper and mustard to taste
Method:
- Line 18 greased muffin tins with thinly sliced bread slices, removing the crusts.
- Spread bread slices with soft butter – it is easier to use the back of a spoon rather than a knife.
- Bake at 200 degree C for about 8-10 mins. till crisp.
- For Filling :
- Fry the chopped onions in 1 tbsp. of butter till soft.
- Add chopped capsicum, chopped celery and cooked corn kernels. Take off fire.
- Add the white sauce, ground cheese, salt, pepper and mustard to taste.
- Pour the mixture into the bread cups.
- Sprinkle a little more ground cheese on top.
- Bake at 180 degree C for about 10 mins.
- Serve hot with chilli sauce.
