Ingredients:
• 1 liter vegetable stock
• 800g – red Tomato
• 100g – Carrots
• 80g – red Onions
• 10g – Garlic
• 2 ml – Olive oil
• 10g – Basil
• 300g – whole spelt bread, diced into medium sized croutons
• 200g – broccolini
• 5 ml – Honey
• 100g – yellow cherry Tomatoes
Method:
- Cook red tomatoes, garlic, onions, carrots, and oil in the vegetable stock.
- Blend and strain.
- Season with salt and a little honey.
- Cut the yellow cherry tomatoes into cubes and add to the soup.
- Garnish with short braised broccolini and basil croutons.
