Ingredients:

• 1/2 kg – tender small bitter ground
• 1 cup – Tamarind juice
• 2 tsp – chilli powder
• 1 tsp – Turmeric powder
• 1 tsp – Ginger and Garlic paste
• A few – Curry leaves
• Salt to taste
• 2 tbsp – oil
• 1 tsp – cumin powder
• 2 tbsp – Sugar
• 2 – Onions chopped.

Method:

  1. Scrape the bitter gourd and cut them into medium size slices.
  2. Soak them in salt water for about 2 hours.
  3. Heat oil in pan and fry the onions till light brown.
  4. Add the ginger and garlic paste and saute for a few minutes.
  5. Add the chilli powder, cumin powder, curry leaves, turmeric powder, and fry for some time.
  6. Drain the water from the bitter gourd and add it to the masala. Keep frying for a few minutes.
  7. Now add the salt, sugar and tamarind juice and simmer on low heat till the bitter ground is cooked and the gravy is thick.
  8. Serve.
