Ingredients:

• 3 – Mutton brains
• 2 – Onions ( finely chopped)
• 2 tbsp – Coriander leaves ( finely chopped)
• 1 tbsp – oil
• Coriander leaves – finely chopped (to garnish)
• Oil – for shallow frying
• Salt – to taste
• To be ground to a fine paste:
• 5 to 6 – Green chillies
• 1-inch piece – Ginger
• 4 Cloves – Garlic
• 1 – Onion (chopped)
• 1/2 tsp – Turmeric powder
• 3 – Cloves

Method:

  1. In a bowl mix together the brain pieces, ground masala paste, onions, coriander leaves and salt. Mix well.
  2. Rub with your hands gently so as to coat the pieces evenly with the masala.
  3. Heat oil in a pan and add the brain mixture. Sautee for 2-3 minutes.
  4. Cook covered on a very low flame, stirring often.
  5. Cook till done and the masala is fairly dry.
  6. Garnish with finely chopped coriander leaves.
  7. Serve hot.
