Ingredients:
• 3 – Mutton brains
• 2 – Onions ( finely chopped)
• 2 tbsp – Coriander leaves ( finely chopped)
• 1 tbsp – oil
• Coriander leaves – finely chopped (to garnish)
• Oil – for shallow frying
• Salt – to taste
• To be ground to a fine paste:
• 5 to 6 – Green chillies
• 1-inch piece – Ginger
• 4 Cloves – Garlic
• 1 – Onion (chopped)
• 1/2 tsp – Turmeric powder
• 3 – Cloves
Method:
- In a bowl mix together the brain pieces, ground masala paste, onions, coriander leaves and salt. Mix well.
- Rub with your hands gently so as to coat the pieces evenly with the masala.
- Heat oil in a pan and add the brain mixture. Sautee for 2-3 minutes.
- Cook covered on a very low flame, stirring often.
- Cook till done and the masala is fairly dry.
- Garnish with finely chopped coriander leaves.
- Serve hot.
