Ingredients:
• 2 cups mashed Potatoes
• 1/2 cup bread crumbs
• 1 beaten Egg
• 1 tbsp Corn flour
• Oil to fry
• 8 hard-boiled eggs
• Salt
• 1 tbsp chopped Coriander leaves
• 1 tbsp chopped Mint leaves
• Grind :
• 1/2 Coconut
• 3 Green chillies
• A small handful of Coriander leaves
• Juice of 1/2 Lemon
Method:
- Mix chopped masala, salt, corn flour and beaten egg in the mashed potatoes.
- Cut each hard-boiled egg into half, length-wise, spread a layer of chutney on one half and join together.
- Cover completely with mashed potatoes, roll in bread crumbs and fry in hot oil till lightly browned.
