Ingredients:
• 2 cups – All-purpose flour
• 1/2 cup – Sugar
• 1/4 cup – Butter
• 1/4 cup – Sunflower oil
• 1/2 cup – Buttermilk
• 1/2 cup – Orange juice
• 1 tsp – Orange zest
• 1 tsp – Baking powder
• 1/2 tsp – Baking soda
• 1 tsp – Vanilla extract
• 2 tsp – Poppy Seeds
Method:
- Preheat the oven to 350 degrees F.
- Sieve the flour with baking soda and baking powder, add the poppy seeds and keep aside.
- Beat the sugar, butter and oil until the sugar gets well dissolved.
- Immediately add the buttermilk, orange juice, orange zest and vanilla extract and whisk well.
- Gradually add the dry ingredients to the wet ingredients and mix well with a spatula. The batter will be quite thick but don’t overmix the batter, else the muffins will become hard.
- Drop enough batter into a silicone muffin tray and bake for 20-25 minutes until a skewer inserted comes out clean.
