Ingredients:
• 1.5 cups – Whole Wheat flour
• 1/2 cup – Corn flour
• 1 cup – Sugar
• 1/2 cup – Oil
• 3 tbsp – Yogurt
• 1/2 cup – Strawberry puree
• 1 tsp – Baking soda
• 1 tbsp – Apple cider Vinegar
• 2 tbsp – Pumpkin seeds +1 tsp – for topping
Method:
- Preheat the oven to 350 degrees F.
- Grease a loaf pan and keep aside.
- In a large bowl, combine together the flours, pumpkin seeds, baking soda and sugar.
- In another bowl, mix the oil, yogurt, vinegar and strawberry puree well.
- Make an indent in the centre of the dry ingredients and add the wet ingredients.
- Stir together gently but don’t over stir.
- Pour the batter into the prepared loaf pan, sprinkle the pumpkin seeds on the top and bake for 25-30 minutes until the skewer inserted comes out clean.
- Remove from the oven and let it cool completely.
- Serve with tea or coffee.
