Ingredients:

• 100g – plain flour
• 80 g – Ragi flour
• 1 – Egg yolk
• 50 g – Butter
• 50 g – smooth Peanut Butter
• 3 tbsp – gold safe Sugar syrup or 100 gm – Brown sugar
• 1/4 tsp – bicarbonate of soda
• a splash of Milk if required
• few blanched Peanuts to decorate (optional)

Method:

  1. Preheat the oven to 180 degree Celsius.
  2. Sift the flour and soda in a bowl, add both types of butter and mix well until it resembles breadcrumbs.
  3. Add the egg yolk and sugar syrup, mix well to bring the dough together.
  4. If the dough remains crumbly add 1 or 2 tbsp of milk and knead together to make it into a dough.
  5. Roll the dough into a log shape, flatten it lightly at the top.
  6. Cut it into 1 cm slices, place it in a baking tray lined with a baking paper.
  7. Place a peanut on top of each biscuit, bake it in the preheated oven for 15 to 20 minutes.
  8. Leave it to cool in the tray for 5 minutes, then transfer it to a wire rack to cool.
