
Ingredients:
• Rice – 1 cup
• Carrot – 2 (small)
• Oil – 2 tbsp
• Mustard – 1 tsp
• Urad Dal – 2 tsp
• Red Chilli – 2
• Cashewnuts – a few
• Salt to taste
Method:
- Cook the rice and let it cool.
- Grate the carrots.
- Heat oil in a pan. Add the mustard seeds, urad dal, red chillies and cashews.
- When the cashews are brown, add the grated carrots.
- Add salt and fry until the raw smell leaves.
- When the mixture cools, mix with the rice thoroughly.
- Serve with papad or aloo curry.
